500 gms chicken livers ½ cup butter, divided 1 small onion, finely chopped 2 tablespoons brandy ½ teaspoon salt ¼ teaspoon black pepper ¼ teaspoon ground nutmeg Fresh herbs for garnish
Heat butter in a pan, sauté onions until soft. Add chicken livers, cook until browned and cooked through.
Transfer livers and onions to a food processor. Blend until smooth. Add brandy, salt, pepper, and nutmeg, blend again.
Melt more butter, pour over the pâté mixture, and stir well. Pour into ramekins, smooth the top. Refrigerate for 2 hours.
Once set, serve with toasted baguette slices or crackers. Garnish with fresh herbs. Enjoy the creamy and flavourful chicken liver pâté!
