Gatte ki sabzi is a Rajasthani dish you can add to your menu when you don’t have fresh vegetables. Made with besan and gatte, the sabzi features a creamy gravy that you can have with roti or rice.
For Gatte: Besan - 2 cups Water - 4 tablespoons Oil - 1 tablespoon Red chilli powder - 1/2 teaspoon Coriander powder - 1/2 teaspoon Ajwain (carom seeds) - 1/4 teaspoon Turmeric powder - 1/4 teaspoon A pinch of hing A pinch of salt
For the Sabzi: Curd - 1 cup Water - 1 cup Oil - 2 tablespoons Coriander leaves - 2 tablespoons Coriander powder - 1 tablespoon Cumin seeds - 1 teaspoon Turmeric powder - 1/2 teaspoon Red chilli powder - 1 teaspoon Bay leaf, cloves, cinnamon stick - 1 Salt to taste
Knead a dough for gatte with besan, oil, water, and all the spices.
Roll the dough to make cylindrical gatte and cook them in boiling water for about 5 minutes.
Drain the extra water and set the gatte aside.
In another pan, heat some oil and add all the spices. Add curd and spices and simmer.
Mix in the gatte, add salt to taste, garnish with coriander leaves, and enjoy.
