Vada pav is an iconic snack food but just doesn't taste right without the beloved sukka chutney. This recipe is spicy and packed with garlic to make your vada pav even more flavourful.
15-20 garlic pods 1/4 cup desiccated coconut 2 tsp sesame seeds 1/4 cup roasted peanuts 4-5 whole dry red chillies 1/2 tsp Kashmiri red chilli powder Salt to taste 1 tbsp oil
Heat oil in a pan over medium flame. Add dry red chillies and sauté until they puff up, approximately 20 seconds.
Add garlic pods and sauté for 30-40 seconds.
Introduce roasted peanuts to the pan and sauté for an additional 30-40 seconds. Then, turn off the flame.
Dry roast fresh coconut for around 1 minute on a low flame or dry coconut for 15-20 seconds.
Dry roast sesame seeds for 15-20 seconds. Allow all the ingredients to cool down.
Place the cooled ingredients in a mixer or grinder jar along with Kashmiri red chilli powder and salt. Grind it slowly, preferably using the pulse mode to prevent the release of oil, until a proper consistency is achieved.
Your chutney is now ready to be served! Enjoy it with vada pao, garlic chutney, or alongside masala parantha.
