Modak is a very popular sweet dish which is prepared especially during the festival of Ganesh Chaturthi. There are many variations of Modak, but this one is made using the sweet boondi. Here is how to make motichoor modak:
For making boondis: ½ cup gram flour (besan) Salt as per taste Pinch orange colour 1 tsp ghee Pinch baking soda Water as required Oil For making sugar syrup ½ cup sugar ¼ cup water For toppings 10 to 12 saffron strands ½ tsp cardamom powder (Elaichi) pinch salt, optional ½ tsp rose water 1 tsp melon seeds 1 tsp whole almonds (Badam) 1 tsp ghee
Sieve besan, add salt, food colour, and ghee.
Mix with water to make a thick batter.
Heat oil in a kadai, and add baking soda to the batter.
Use a perforated ladle to make boondis in hot oil.
Fry until 3/4th done, remove and drain.
Cool the boondis, then grind into a coarse powder.
Heat sugar and water to a one-string consistency, and add food colour.
Mix the powdered boondis with almonds, melon seeds, saffron, and spices.
Add sugar syrup slowly, let it rest for 15-20 minutes.
Shape into modaks using a greased mould, refrigerate, and serve.
