Coconut barfi is a popular sweet offered as prashad during festivals. Made from freshly grated coconut, condensed milk, and cardamom, this delicacy is easy to make at home and ready in no time.
2 cups freshly grated or desiccated coconut 1 cup condensed milk 1/2 cup sugar 1/4 cup milk 1/2 tsp cardamom powder 2 tbsp ghee A few saffron strands
If you're using desiccated coconut, soak it in warm milk for about 10 minutes to soften it. If using fresh coconut, you can skip this step.
In a heavy-bottomed pan, heat ghee. Add the grated coconut and sauté for 2-3 minutes.
Pour in the milk and condensed milk, stirring continuously. Add sugar and continue cooking the mixture.
Add the cardamom powder and saffron strands . Keep stirring the mixture until it thickens and starts to leave the sides of the pan. This should take about 10-15 minutes.
Grease a plate or tray with ghee. Pour the mixture into the tray and spread it evenly.
Let the mixture cool for about 30 minutes. Once set, cut it into squares or diamond shapes.
