Boondi Ladoo is a traditional Indian sweet made from tiny fried gram flour pearls called boondi soaked in fragrant sugar syrup, then shaped into round balls. Often prepared during festivals and celebrations, these ladoos are soft, sweet and delicious.

Ingredients

1 cup besan (gram flour) 1 ½ cups sugar ¾ cup water 4-5 cardamom pods, crushed A pinch of saffron 2 tbsp ghee 2 tbsp cashews and raisins Oil

Step 1

Mix the besan with water to form a smooth, flowing batter. Ensure there are no lumps.

Heat oil in a deep pan. Use a perforated ladle to drop the batter into the hot oil, forming small round boondis.

Step 4

Fry until they turn light golden, then remove and drain excess oil.

Step 5

Add the fried boondis into the hot sugar syrup. Mix well and add fried cashews and raisins.

Step 6

Once the mixture cools slightly, grease your palms with ghee and shape the mixture into small ladoos. Let them set.
