Sweet boondi is made from fried gram flour droplets soaked in sugar syrup. Soft and juicy, with hints of cardamom and saffron, it’s a festive treat often prepared for celebrations and special occasions.

Ingredients

1 cup besan (gram flour) 1/4 tsp baking soda 1 cup sugar A pinch of saffron 1/2 tsp cardamom powder Ghee or oil Water

Step 1

In a bowl, mix the besan and baking soda with water to form a smooth, lump-free batter. The batter should be of a flowing consistency.

Step 2

In a pan, mix sugar with 1/2 cup of water and bring it to a boil. Let it simmer until it reaches a single-thread consistency. Add saffron and cardamom powder for flavour.

Step 3

Heat oil or ghee in a deep frying pan. Using a perforated ladle, pour the batter into the oil, letting the drops fall and form tiny boondis.

Step 4

Fry them until light golden, and drain on paper towels.

Step 5

Add the fried boondis to the warm sugar syrup and let them soak for a few minutes until they absorb the sweetness.

Step 6

Sweet boondi can be served warm or at room temperature.
