As the country gears up for one of the most awaited festive season, it's time to indulge in the famed Ukadiche Modaks. Here is the recipe of Modaks by Maharaj Bhawar Singh, Corporate Chef from Khandani Rajdhani. Cook and enjoy!

100 Grams Rice flour Salt 1 teaspoon Oil for greasing For stuffing: 100 Gram Fresh coconut grated 80 Gram Jaggery (gur) grated 20 Gram Poppy seeds (KhusKhus / Posto) roasted A pinch of Green cardamom powder A pinch of Nutmeg powder

Heat 100 ml. cups of water and one teaspoon oil in a deep non-stick pan. Bring to a boil, reduce heat, and add the rice flour gradually, stirring continuously to prevent lumps from forming.

Cover the pan with a deep lid and pour some water into the lid. Cook on low heat for three minutes.

Transfer the mixture to a large plate, grease the palms of your hands with oil and knead the dough till completely smooth and pliable. Rest the dough covered with a damp cloth.

Add 1 Tea spoon Ghee in a pan with grated Coconut roast it until it is brown. Then add jaggery. Add the roasted poppy seeds, cardamom powder and nutmeg powder.

Divide the dough into 12 equal portions & shape them into balls. Grease the palms of your hands and make each ball into a bowl. Place the stuffing in the centre; pleat the edges of the bowls. Gather the edges and seal.

Heat sufficient water in a steamer. Place the modaks on a perforated plate in the steamer and steam for ten to twelve minutes. Serve the hot Modak with pure ghee.
