Prepared especially on the day following Ganesh Chaturthi, also known as Rishi Panchami, Rishichi Bhaji is a savoury curry made with seasonal vegetables. Here’s the recipe for you to try out.
¾ cup ridge gourd, chopped ¾ cup yellow pumpkin, chopped ¾ cup elephant foot yam, chopped ¾ cup raw banana, chopped 3/4 cup taro roots, chopped 1 cup colocasia leaves, chopped 1 cup red amaranth leaves, chopped
1 corn cob, chopped 3 green chillies, chopped ½ cup peanuts, deshelled ½ cup coconut, grated 1 tsp jaggery powder ½ tsp tamarind pulp 3 tbsp peanut oil Salt, to taste 2 cups water
Heat oil in a wok, then add the green chillies and let them splutter.

Now add all the vegetables one by one and saute for 5-10 minutes.
Add salt, the leafy greens, coconut, peanuts and mix well.

Add the water and cook until the vegetables are done.
Add the tamarind pulp, jaggery powder and adjust the salt. Cook for another 10 minutes.
Serve the Rishichi Bhaji hot with jowar bhakri, roti or rice.
