Gajar ka Halwa, the classic Indian dessert, is the perfect winter warmer with grated carrots, milk and ghee slow-cooked to perfection. This dessert is a favourite during festivals and family get-togethers, it has the right balance of sweetness and texture with ghee and nuts. Here is how to make it.
1 kg grated red carrots (gajar) 1 litre full-cream milk 200 g sugar 4 tbsp ghee ½ tsp cardamom powder Chopped cashews, almonds, and pistachios (according to your need) 100 g khoya (optional, for extra richness)
In a heavy-bottomed pan, add grated carrots and milk. Bring to a boil, then simmer until the milk reduces and thickens, stir occasionally.
Once the milk has evaporated, add ghee and sugar. Let it boil and stir continuously until the mixture becomes soft, thick and glossy.
Add cardamom powder for aroma and khoya for extra richness, and stir well.
Add chopped nuts, and save some for garnish. Cook for a minute or two.
Garnish with remaining nuts and serve
