Pickles are an integral part of Indian cuisine. It goes well with all three meals. So, if you are also looking for some winter pickles to relish this season, here is an easy recipe to make instant gajar ka achaar at home.

1 cup carrots peeled sliced ¼ cup oil 1 tablespoon mustard seeds ½ teaspoon methi seeds 1 tablespoon coriander seeds salt to taste ½ teaspoon lemon juice ½ teaspoon turmeric powder ½ teaspoon red chili powder jaggery to your taste

Dry roast your coriander seeds, mustard seeds and methi seeds first. Transfer them to a mixer jar and crush into a coarse powder.

Then transfer to a mixing bowl. Add turmeric powder, red chili powder, salt, warm oil, lemon juice and jaggery.

Now add peeled and sliced carrots. Mix it well and enjoy.
