Gadeko Golbheda aachar is a delicious and simple Nepali pickle made with tomatoes. It is such a quick and simple dish that it can be prepared by anyone.

10 medium-sized tomatoes cut in 4 ½ head cauliflower - diced 13-14 green chilies whole 14-15 cloves garlic 2 in ginger sliced ¼ cup mustard seed - toasted and ground ¼ cup coriander seed - toasted and ground 1 tbsp ground turmeric 1 tbsp ground red chili Salt to taste ¾ cup mustard oil

Sundry tomatoes, green chilies, garlic, and ginger for 8-9 hours.

Place dried veggies into a mixing bowl. Add all the spices and mustard oil to the bowl. Mix thoroughly with your hands.

Transfer the mixture to a jar and close the lid, making sure it is sealed properly. Leave a little bit of space on the top as the oil bubbles up and might overflow if it’s up to the neck of the jar.
