This incredibly beautiful and delicious jam is an interesting combination of contrasting flavours and has a mild kick of chilli, to tingle your tastebuds at breakfast.
3 red bell peppers 750 grams sugar 7 fresh red chillies 3 bird’s eye chillies 400 ml white vinegar 2 tablespoons pectin + 2 tablespoons sugar 1 tablespoon rose water
Chop the chillies and capsicum as finely as possible or use a food processor.
Mix the vinegar and sugar in a heavy-bottomed saucepan and heat it until the sugar dissolves.
Add the chopped mixture to the sugar and stir for 4-5 minutes, until it comes to a roaring boil.
Reduce the flame and slowly drizzle the pectin-sugar mixture as you stir, to avoid clumping.
Cook for another 5 minutes until the jam thickens and turn off the flame before adding the rose water.
Cool completely and store in air-tight jars in the refrigerator.
