Winter pickles, or achaars, are essential in every Indian household. Gobi paranthas with a spoonful of pickles is an ideal winter meal. The taste of simple steamed rice and daal can be enhanced with just a small amount of pickle. Winter means an abundance of vegetables and pickles can become a source of it.

Orange peels can be used in a variety of ways, but pickle was not one of them until now. Do not discard the peels after eating the fruit and make a pickle out of it. Just mix the peels, tamarind, and jaggery with a few seasonings like turmeric and chilli powder.

Garlic pickle, also known as lahsun ka achaar, is a delicious winter pickle that can increase the taste of daal chawal. The trick is to sauté the peeled garlic in oil with a variety of spices like mustard, cumin, and chilli powder. For some extra kick add green chillies.

Another easy winter pickle recipe. Make a brine with sugar and rice vinegar heat it so that it mixes well. Cool and soak the ginger shavings or pieces in it. These brine pickles are ready in 24 hours. Enjoy them!

This is another popular winter pickle that's simple to make at home. As with the previous recipes, stir fry amla with a variety of spices such as fenugreek seeds, yellow mustard, black pepper, asafoetida, and others. And the pickle is ready.

While eating chhole bhatura they serve a couple of gajar ka achar. It can be easily made. The ingredients are basic spices like fenugreek seed, yellow mustard, black cumin, turmeric powder and carrots.

A mixed pickle contains a little bit of everything. Take any vegetable to pickle and temper it well with the basic spices and a lot of vinegar. Use radishes, carrots, chilies, cauliflowers, ginger, garlic, and other vegetables. Enjoy a delicious batch of mixed pickles.
