Quinoa, fresh vegetables, and a tangy soy sauce are combined to create an easy and tasty salad. Super delicious and healthy.

Ingredients

2 cups quinoa cooked 2 Tbsp olive oil 2 Tbsp lemon juice 1 medium tomato diced 1 medium cucumber peeled, diced 2 medium carrots peeled, chopped 4 Tbsp fresh flat-leaf parsley finely chopped

Step 1

Take medium size bowl, add quinoa, oil, and lemon juice, and mix them well.

Step 2

Now wash and dice  tomato, cucumber, and carrot into cubes or desired shape.

Step 3

In a bowl mix the veggies and quinoa mixture well. Toss the ingredients to make it flavourful.

Step 4

Now add parsley. And mix super well! The salad is ready! Refrigerate it for around 2-3 hours and serve cool!
