Avalakki, also known as avalakki upma, is a delicious and nutritious South Indian snack that provides a refreshing alternative to the more common poha. This easy-to-make dish can be whipped up in just 20 minutes, making it the perfect light meal when you're short of time.
2 cups avalakki/flattened rice 1 tbsp ghee 1 tsp mustard seeds 1 tsp urad dal A few curry leaves 1 onion, finely chopped 1 green chili, finely chopped 1 carrot, grated 5 beans, chopped 1/4 cup roasted peanuts Salt to taste
Heat ghee in a pan and add the mustard seeds. Allow them to splutter.
Add urad dal and curry leaves and sauté for 30 seconds.
Next, add the chopped onions, green chilies, grated carrots and chopped beans. Sauté for 2-3 minutes.
Now add the avalakki/flattened rice and roast for 2-3 minutes on low flame.
Add salt to taste and roasted peanuts. Mix well.
Cook for another minute allowing the flavours to combine. Garnish with coriander leaves before serving.
