The secret to acing a batch of perfectly spiced and sour sambar is the podi or authentic masala. It is a blend of spices that infuse the dish with its unique aroma and flavour. Make this spice mixture at home.

Ingredients

1 tbsp toor dal 1.5 tbsp chana, urad dal ¾ tsp methi seeds 8-12 red chillies 2 tsp cumin ¼ tsp turmeric ⅛ tsp hing 1 tsp peppercorn 15-20 curry leaves ¼ cup of coriander leaves

Step 1

Wash lentils thoroughly and dry them.

Heat a pan and turn the flame to the lowest setting.

Dry roast urad, chana dal, toor dal, and red chillies until the lentils turn golden.

Add coriander seeds and methi seeds until they turn dark and aromatic.

Add cumin seeds to the pan and turn off the flame for a minute.

Blend the ingredients and store the jar in your refrigerator.
