For A Healthy Egg Breakfast, Try Greek Strapatsada

Indulge in the flavours of Greece with this delicious Strapatsada Eggs recipe.  It's a simple yet satisfying dish featuring scrambled eggs cooked in a rich tomato sauce, infused with aromatic herbs and spices.

Ingredients

4 large eggs 2 tablespoons olive oil 1 small onion, finely chopped 2 garlic cloves, minced 4 ripe tomatoes, diced 1 tsp dried oregano ½ tsp paprika Salt and pepper to taste Fresh parsley, chopped for garnish

Step 1 

Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until translucent.

Step 2

Add tomatoes, oregano, paprika, salt, and pepper. Cook for 10 minutes, until tomatoes are softened and sauce thickens.

Step 3

Crack eggs into the skillet, gently stirring to incorporate with the tomato mixture.

Step 4

Continue cooking, stirring occasionally, until the eggs are cooked to your desired consistency.

Step 5

Remove from heat, sprinkle with fresh parsley and feta, and serve hot.
