These mango pancakes are a delicious twist to traditional pancakes and a great way to enjoy the sweet and juicy flavor of mangoes in a breakfast dish.
1 cup all-purpose flour 1 tbsp sugar 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 cup milk 1 egg 2 tbsp melted butter 1 cup diced mango Butter or oil for cooking
Take a bowl and combine all-purpose flour, sugar, baking powder, baking soda, and salt. Mix well.
Now in another bowl, beat the egg and mix in the milk and melted butter. Mix the wet ingredients with the dry ingredients.
Make sure the batter is smooth and lump free. Now add in the diced mangoes.
Give the batter a gentle mix. Heat a non-stick pan grease it with oil. Pour 1/4 cup of batter and let it cook.
Flip the pancake and cook until the other side is golden brown. Serve hot with maple syrup, honey, or whipped cream.
