Also known as “shrimp,” prawn is a nourishing seafood that offers a host of health benefits, including strengthening muscles and boosting immunity. Combine fresh prawns with mushrooms, noodles, and stir-fry vegetables to craft a quick, easy, and satisfying prawn soup. Here’s how.
3.5 cups coconut milk 300 g straight-to-wok noodles 300 g crispy, stir-fry vegetables 200 g large prawns 140 g sliced shiitake mushrooms 200 ml vegetable or fish stock 2 tbsp Thai green curry paste 1 tbsp sunflower oil
In a heated wok, mix oil, stir-fry vegetables, and mushrooms for about 3 minutes. After the ingredients have combined properly, remove the mixture and set it aside for cooling.
Add the curry paste in a pan and fry it for about 60 seconds. Combine the coconut milk and stock with the fried curry paste, bringing the concoction to a boil.
As the mixture boils, add the noodles. Then, decrease the heat and allow the mixture to simmer for about 4 minutes, till the prawns are fully cooked.
Pour the vegetable and mushroom mixture from Step 1 into the soup, and serve or savour the dish, as needed. Enjoy!
