Salads are popular summer foods as they serve as light and nutritious meals that are easy to whip up. Combine black beans and sweet corn with a host of fresh and juicy vegetables and herbs to craft a vibrant summer special salad. Here’s how.
2 cans washed and dried black beans 6 sliced onions 2 chopped tomatoes 1 chopped red bell pepper 1 peeled, pitted, and diced avocado 1 minced garlic clove 1.5 cups frozen corn kernels ½ cup olive oil ½ cup fresh cilantro ½ cup fresh lime juice 1 teaspoon salt ½ teaspoon ground cayenne pepper
Combine olive oil, lime juice, garlic, salt, and cayenne pepper in a jar. Seal the jar and shake it thoroughly until the dressing has blended properly.
In a separate container, mix the beans, corn, bell pepper, tomatoes, avocado, onions, and cilantro.
Give the dressing another vigorous shake, and pour it over the salad. Toss the salad to ensure that the dressing and the vegetables have melded satisfactorily.
Transfer the salad to serving bowls or serving plates, and serve or savour the dish, as required. Enjoy!
