Beetroot raita is a refreshing and vibrant side dish in Indian cuisine, made by combining grated or boiled beetroot with yogurt and spices. It pairs wonderfully with biryanis, pulao, or simple meals to cool down the palate and the stomach.
1 beetroot 1 cup yoghurt ½ tsp roasted cumin powder ¼ tsp black salt 1 green chilli 1 tsp chopped coriander leaves A pinch of black pepper ½ tsp sugar
If using raw beetroot, peel and grate it.
If boiling, peel and boil it until soft, then chop it into small cubes.
Whisk the yoghurt in a bowl until smooth and creamy.
Add the grated or boiled beetroot, roasted cumin powder, black salt, black pepper, and chopped green chilli to the yogurt. Mix everything well.
Refrigerate for 10–15 minutes. Garnish with coriander leaves before serving.
