A double-fried fish cutlet with a unique egg net, Fish Kabiraji is a Bengali dish that is served across cafes, cabins and restaurants. Want to try this iconic dish at home? Here’s the recipe.
2 bhetki fish fillets 1 tsp lemon juice Salt, to taste Black pepper, to taste 1 onion 2 green chillies 1 tsp ginger garlic paste Coriander leaves ½ cup flour 2 eggs, whisked 1 cup breadcrumbs

For the egg net: 4 eggs 2 tsp cornflour Salt, to taste Black pepper, to taste Oil, for frying

Place the onion, green chillies, ginger-garlic paste, coriander leaves, salt and pepper in a mixer and blitz well.
Apply the onion marinate on the washed and cleaned fish fillet. Let it rest while you lay out the remaining ingredients.

Coat the fish fillets on the flour, then dip and coat with the eggs, then coat properly with the breadcrumbs.

Heat oil in a pan and fry the breaded fish fillets until golden brown. Set aside.

To make the egg net, whisk all the egg net ingredients together and make a thick batter.

Heat oil in the work and use your fingers, a fork or a whisk to make a long, wide net with the egg batter.

Place the fried fish on one side of the net and gently fold everything over to get a double-fried fish cutlet with egg net.
Serve the Fish Kabiraji with kasundi, ketchup and onions.
