A spicy local delicacy made with cheese and chillies, the ema datshi is a stew that is eaten with rice. Recreate this national dish of Bhutan at home using easily available ingredients, for a meal that is quick and comforting.

250 grams slit jalapenos 6 green chillies, slit lengthwise ¼ cup sliced onions 6 cloves garlic, chopped 2 cups grated cheddar ¼ cup tomatoes, diced 3 tablespoons butter 1 tablespoon vegetable oil Salt and pepper, to taste

Add the oil to a pan and saute the garlic, onions, green chillies and jalapenos for a couple of minutes.

Add the tomatoes and season lightly with salt before adding in some water and allowing the peppers to soften slightly.

Turn off the flame and add the butter and cheese to mix well and combine.

Season with salt and pepper and serve immediately over rice, chilli pork or steamed baos.
