Kandali Saag is a regional dish made in mountain regions in India, mainly in Uttarakhand and Himachal Pradesh. Try this seasonal green to tantalise your taste buds and soothe your mind.

2 cups fresh Kandali Saag 1 onion 1 tomato 2 green chillies 2 cloves garlic 1/2 inch ginger 1/2 teaspoon cumin seeds 1/2 teaspoon mustard seeds 1/4 teaspoon turmeric powder 1/2 teaspoon red chilli powder Salt to taste 2 tablespoons oil

Prepare the Kandali Saag carefully and properly.

Heat oil and add cumin seeds, mustard seeds, chopped onions, minced garlic, grated ginger, chopped green chillies.

Then, add turmeric powder, red chilli powder and chopped tomatoes one by one.

Add the chopped Kandali Saag to the pan. Mix well with the spices and add salt.

Cook for 10-15 minutes until the saag is mushy, and enjoy hot.
