Sabudana Vada is a popular Indian snack, also eaten during fasting periods. Here's how to make these crispy fritters.
1 cup sabudana (tapioca pearls) 2 potatoes 1/2 cup roasted peanuts 1-2 green chillies 1 teaspoon of cumin seeds 1 teaspoon grated ginger 2 tablespoons of coriander leaves Rock salt
Rinse the sabudana in water until the water runs clear to remove excess starch. Soak it overnight.
In a large mixing bowl, combine sabudana, mashed potatoes, ground-roasted peanuts, chopped green chillies, cumin seeds, grated ginger, and coriander leaves. Add salt.
Mix all the ingredients to form a dough-like consistency.
Grease your palms with a little oil. Take a small portion of the mixture and flatten it slightly to form a patty.
Heat oil in a kadhai. Drop a small piece of the mixture into the oil; if it sizzles and rises to the surface, gently slide a few wadas into the hot oil, ensuring not to overcrowd the pan.
Remove the vadas and drain them on paper towels to remove excess oil. Serve with sweetened yoghurt.
