Palak patta chaat is a speciality of Varanasi and is widely popular throughout Uttar Pradesh and New Delhi. It is delicious, nutritious, and oh-so-crunchy. If it is raining like crazy and you want your cravings satisfied, make palak patta chaat at home with this quick recipe.
1 tsp carom seeds & chilli powder 1 cup gram flour 1/2 tsp turmeric powder Salt to taste 20-25 fresh spinach leaves 1 cup whisked curd 1 tsp chaat masala & cumin powder ½ cup chopped onions & tomatoes ½ cup sev 2 tbsp coriander leaves 2-3 tbsp tamarind chutney 2-3 tbsp green chutney Oil for frying
Wash palak leaves thoroughly to get rid of dust and dirt. Keep them aise and prepare a spiced batter of gram flour.
Add water to gram flour containing carom seeds, red chilli powder, turmeric powder, and salt to taste.
Dip each spinach leaf in the mixture and deep fry it in hot oil until crispy.
Keep the fried leaves aside for the excess oil to drain so that you can assemble the chaat.
Arrange fried leaves on a plate and top them with yoghurt, chutneys, onions, and tomatoes.
Garnish with sev and coriander leaves before serving with a hot tea or refreshing jal jeera.
