Fajeto is a delicious and tangy Gujarati dish made with ripe mangoes and yogurt. It is a summer speciality and we have a quick recipe for you to try.
Chop 2 ripe mangoes. Blend them into puree. Whisk 1 cup dahi with 2 tbsp gram flour until smooth. Adjust consistency with water.
Heat 1 tbsp ghee, add 1 tsp cumin seeds and 1/4 tsp asafoetida. Then, add 1 tsp ginger-green chili paste, 1/2 tsp turmeric, 1/2 tsp red chili powder.
Pour in mango puree, stir well, and cook for 2-3 minutes. Gradually add yogurt-gram flour mixture, stirring continuously.
Add salt, simmer for 5-7 minutes. Garnish with fresh coriander leaves. Serve with rice and enjoy!
