Dry chutneys, known as podi, are a simple method to increase the nutritional value of your meals. This is the simplest way possible to incorporate drumstick leaves, or this superfood, into your diet.
Oil - 1 tsp Channa dal - 1 tbsp Urad dal - 1 tbsp Dhaniya - 1 tbsp Jeera - 1 tsp Black pepper - 1 tsp Dry red chilli - 5 Moringa leaves - 1 1/2 cup loosely packed Tamarind - small lemon size Hing - 1/2 tsp Salt
Start with roasting the lentils and spices in oil till they're automatic.
Then add in the washed drumstick leaves and saute this in a slow flame till the leaves turn crispy. This process takes about 5 to 7 minutes.
Once done transfer to a plate and let this cool a bit. Then grind it to a coarse powder adding a asafetida and salt.
Store this in an air tight container and this stays good for weeks.
