Dive into the soothing flavors of South Indian Curd Rice, where fluffy rice combines with yogurt, tempered spices, and fresh vegetables.
1 cup cooked rice 1 cup plain yogurt (curd) 1/4 cup milk 1 tbsp oil 1/2 tsp mustard seeds 1/2 tsp cumin seeds 1/2 tsp urad dal (split black gram) 1/2 tsp chana dal (split Bengal gram) 1-2 green chilies, finely chopped 1/4 cup grated carrot 1/4 cup finely chopped cucumber Chopped coriander leaves Salt, to taste
In a bowl, mash the cooked rice with a fork or spoon until it becomes fluffy. Let it cool.
Add yogurt to the cooled rice and mix well. If desired, add milk for a creamier consistency.
In a pan, heat oil. Add mustard seeds cumin seeds, urad dal, chana dal and green chillies.
Pour the tempering mixture over the curd-rice mixture and mix well. Add grated carrot, chopped cucumber, and chopped coriander leaves.
Mix again. Season with salt, allow it to rest. Garnish with coriander and enjoy!
