Are you a fan of cauliflower rice, and this delicious turmeric cauliflower fried rice may be your favorite version yet. A great weeknight dinner!
2 teaspoons coconut oil ½ cup yellow onion 1 carrot 1 small bunch broccolini ½ cup cooked chickpeas ½ teaspoon curry powder ¼ teaspoon turmeric 2 teaspoons fresh lime juice 2 cups cauliflower rice ¼ cup chopped scallions ¼ cup toasted cashews red pepper flakes or hot sauce ½ cup chopped coriander naan bread, for serving Salt and pepper cardamom yogurt sauce: ½ cup Greek yogurt 1 teaspoon fresh lime juice ½ teaspoon cardamom ¼ teaspoon sea salt black pepper
Combine the yoghurt with the lime juice, cardamom, salt, and black pepper to make the cardamom yoghurt.
Grab a big non-stick pan and heat the oil over medium flame. Chop the broccolini stems, onion and carrot and put them in.
Add half a teaspoon salt and pepper. Sauté for 5 minutes, stirring periodically, or until soft.
Add the chickpeas, simmer the curry powder, turmeric, and lime juice. Then add the scallions and cauliflower rice.
Stir fry the cauliflower for 3 to 4 minutes, tossing periodically, until heated thoroughly and the scallions are tender
Enhance the dish by adding the cashews, red pepper flakes, and cilantro.
Served with naan, and spicy sauce on the side, along with scoops of the cardamom yoghurt on top.
