Originating from Maharashtra, Shevayachi Bhaji is a beloved Indian dish that tantalizes the taste buds with its crispy, spicy, and flavorful profile. Learn how to make this delectable dish.

Ingredients 

1 cup gram flour ½ cup thin sev   1 onion (finely chopped) 1 tomato (chopped) ½ tsp mustard seeds ½ tsp cumin seeds ½ tsp turmeric powder ½ tsp red chili powder A pinch of asafoetida 2 tbsp oil Salt to taste Fresh coriander leaves for garnish

Step 1  

Heat oil in a pan and add mustard seeds. When they splutter, add cumin seeds and asafoetida. Add chopped onions and sauté until they turn golden brown.

Step 2  

Add chopped tomatoes and cook until they soften. Stir in turmeric powder, red chili powder, and salt.

Step 3  

Add gram flour and cook, stirring continuously, until it turns golden brown and releases a nutty aroma. Gradually add water while stirring to form a smooth, thick paste.

Step 4  

Simmer for a few minutes, stirring constantly. Just before serving, add thin sev noodles, garnish with fresh coriander leaves, and enjoy your crispy and spicy Shev Bhaji.
