All the meetha lovers, here is something that will leave you drooling. This phirni is not regular but one made up of bottle gourd or lauki. Recently, Chef Anahita Dhondy took to Instagram and shared the recipe of this phirni which is close to her heart. TAP TO VIEW.
2 lt milk (full fat) 150 gm khoya 800 gm lauki (bottle gourd) 250 gm sugar 100 gm ghee 7 to 8 strands of saffron 2 bread slices Nuts For Garnish 30 gm peeled musk melon seeds 30 gm cucumber seeds 40 gm pistachio 40 gm almonds 50 gm ghee
Peel the Bottle Gourd and grate it roughly. Use a muslin cloth for 45 mins to drain out excess water.
Boil the milk in a heavy bottom pan and once milk has started to reduce, add 250 gm sugar.
Bring the milk to desired consistency. Meanwhile, start caramelizing the remaining sugar.
Turn off the heat and slowly add a laddle of hot reduced milk and stir. Pour the caramel into the reduced milk. Add saffron strands.
In a pan, add ghee, roast the lauki till it becomes translucent. Add the lauki and khoya to the reduced milk. Mix well.
Turn of the heat. In a cold pan, add ghee and when it starts melting, add the melon and cucumber seeds. Add the nuts.
Garnish with nuts and enjoy!
