Unlike the guacamole, the avocado salsa is a riot of spice, garlic and herbs – which retains the creaminess of the avocado but packs quite a punch. Use it as a condiment to add to wraps, sandwiches or even to enjoy with some nacho chips.
2 ripe avocados, pitted 2 jalapenos, chopped 1 small capsicum, diced 3-4 cloves garlic, peeled ½ cup fresh coriander leaves ¼ cup fresh mint leaves ¼ cup vinegar Juice of ½ lemon ¼ cup olive oil Salt, to taste
Combine the avocado, jalapeno, capsicum, garlic, herbs and lemon juice in a blender to grind coarsely.
Add the vinegar, olive oil and salt before blending again until smooth and emulsified.
Transfer to a serving bowl and enjoy at room temperature.
