700 gms potatoes 1/3 cup sesame seeds 1/2 cup mustard oil 1 tbsp ginger Pinch of fenugreek seeds 1/2 tsp red chili powder 3/4 tsp turmeric powder 1/2 tsp timur* 4 tbsp lemon juice 1 tbsp salt 5 green chilies 1/2 cup fresh coriander leaves 1/4 tsp hing Water as required

First, dry roast sesame seeds till they turn golden. When they come to room temperature, grind them into a powder.

Take potatoes. Boil them, peel them, and cut them into pieces. Also, slit green chilies.

Grind or pound timur to make a fine powder.

Take a big bowl and add cubed potatoes, sesame seed powder, salt, green chilies, chili powder, and Timur. Mix well.

Pour the mixture over hot oil over the potato mix and stir properly.

Add water, lemon juice, and chopped fresh coriander and mix well.

Cover the lid and let it sit for 1/2 to 1 hour. Serve as a salad or pickle. Enjoy!
