Fajeto is one of the most well-known dishes prepared in every Gujarati family throughout the summer. In essence, it is Mango Kadhi, a dish composed with chickpea flour, mango puree, and several spices.
1 ½ cup Curd / yogurt (Sour) 4 cup Water 2 tablespoon Besan / chickpea flour Salt to taste 1 cup Mango puree Pinch of Hing Pinch of Chili powder 1 inch Cinnamon sticks Green chili chopped 2 tablespoon Ghee / clarified butter 2 teaspoon Cumin seeds 2 Red dried chilies 1 tablespoon Jaggery Optional Coriander or Garnishing
Combine curd and besan in a sizable mixing dish give it a good mix, make sure it’s lump-free by adding 1 cup of water.
Heat ghee in a pan. Add the cinnamon, clove, cumin, and hing along with the red dried chilies. Sauté them for few seconds.
Put the prepared curd mixture in. Be sure to thoroughly combine. Add 3 cups of water, salt, and mango pulp at this point.
Now Give it a good stir. For five minutes, let it boil. Add Jaggery, green chopped chilies, and a pinch of chilli powder. Blend thoroughly.
Over medium heat, let it boil for an additional 10 minutes. If necessary, add extra water.
Fajeto is now prepared. It's that easy! Serve it with hot White rice with coriander garnish.
