This refreshing summer salad is ideal to eat for lunch on a hot summer afternoon and celebrates the king of all seasonal fruits in a delicious, light way.
2 semi-ripe mangoes, diced 2 red onions, sliced 2 medium-sized tomatoes, diced 2 tablespoons shrimp paste 2 hard boiled eggs, chopped Juice of 1 lemon ¼ cup cilantro Salt and pepper to taste
Toss together the mangoes, tomatoes and onions in a bowl along with the shrimp paste and lemon juice.
Add the chopped boiled eggs, salt and pepper and combine everything well.
Garnish with plenty of cilantro and serve cold.
