Made with orange, mango, rum, fresh lime and mint, this punch is a wonderful summer drink for a brunch, cocktail hour or dinner party. Here is the recipe to prepare this drink at home.
2 cups mango chunks ½ cup sugar ½ cup water 2 cups dark rum ¼ cup fresh lime juice 4 cups orange juice 2 oranges, thinly sliced fresh mint
In a small saucepan, combine the mango chunks, sugar and water over medium heat. Simmer until the sugar has dissolved and then transfer to the jar of a blender.
Puree on high until smooth. Fill a punch bowl with ice cubes and add the mango sauce, rum and lime juice. Add orange juice and mix well.
Add the orange slices and a generous amount of fresh mint and stir everything together until well combined. Serve cold!
