Loaded with superfoods and fibrous ingredients, homemade granola bars are a great sugar-free option to satiate your hunger pangs. Bake a large batch of these bars and impress your loved ones when they reach out for something sweet and decadent.
2 cups rolled oats ½ cup chopped nuts ½ cup dried fruit ½ cup shredded coconut ¼ cup honey/maple syrup ¼ cup peanut butter ¼ cup coconut oil ¼ cup packed brown sugar ¼ cup cocoa powder 1 teaspoon vanilla extract ¼ teaspoon salt ½ cup chocolate chips
Preheat your oven to 175°C and line a baking tray with parchment paper.
Combine the maple syrup, peanut butter, coconut oil, brown sugar, cocoa powder, vanilla extract and salt in a saucepan.
Stir to heat until it melts homogeneously and combine with the remaining ingredients in a mixing bowl.
Transfer into the baking tray and use a spatula to press it firmly and evenly into the pan.
Bake for 20-25 minutes, or until the edges are golden brown and cool on a wire rack.
Cut into squares or bars, cool completely and store in an air-tight jar for up to 3 weeks.
