Move over laal gajar ka halwa, try this incredible safed gajar ka halwa that boasts a melt-in-mouth texture and incredible taste. It is loaded with dry fruits that add some amazing crunch to the dessert. It is a treat that you must try this winter season.

2 cups grated white carrots 2 cups milk 1/2 cup sugar 1/4 cup ghee 1/4 cup khoya 1/4 cup chopped almonds, cashews, and pistachios 1/2 teaspoon cardamom powder Optional: a pinch of saffron strands and silver or gold edible foil (varak) for garnish

Grated white carrots should be added to hot ghee and sautéed until tender.
Add the milk, heat to a boil, and simmer the mixture until the carrots are tender and the milk has decreased.

Stir in khoya, saffron, cardamom powder, and sugar. Cook, stirring constantly, until thickened.
Add chopped nuts that have been roasted in ghee to the halwa mixture.

Add the reserved nuts and edible foil (gold or silver, if preferred) as garnish.
