One of the easiest ways to use up the packet of ramen in your pantry, the cold version of this popular Sichuan preparation is perfect for hot summer days. With a creamy sauce and flavoursome toppings, feel free to make this bowl your own.
1 packet instant ramen 1.5 tablespoons peanut butter 2 tablespoons sesame oil 3 cloves garlic, minced 1-inch piece ginger, grated 1 tablespoon honey 1.5 tablespoons rice vinegar 2 tablespoons soy sauce 1 grilled chicken breast, sliced 3 tablespoons chopped spring onions Salt and pepper, to taste 1 teaspoon sesame seeds
Cook the ramen noodles in boiling water, without the tastemaker packet.
Combine all the remaining ingredients except the chicken, spring onions and sesame seeds in a separate bowl.
Toss the cooked noodles in the sauce while still hot and transfer to a bowl to chill in the refrigerator for 30-40 minutes.
Top up with grilled chicken, spring onions and sesame seeds before enjoying.
