Beat the monsoon blues with a comforting bowl of Lauki soup. Made from humble bottle gourd, this nourishing soup is packed with nutrients and flavors that will warm you up from the inside out.
3 cups lauki, washed, peeled and diced 1 onion, sliced 1 tsp ginger 1 small cinnamon stick Some fresh green garlic and coriander stems 7-10 black pepper corn ½ tsp jeera 1 tbsp ghee Salt and pepper to taste
In a pressure cooker, heat ghee and sauté jeera, ginger, cinnamon stick and onions. Add the diced lauki and sauté. Add fresh green garlic, coriander stems and about 3 cups water. Bring it to a boil and pressure cooker for 3-4 whistles.
Discard the cinnamon stick and blend the soup nicely. There’s no need to strain the soup. Add little milk to adjust consistency, add salt and pepper powder.
Serve with some lemon wedges. You can give it a ghee ka tadka if you wish. It tastes very good! Enjoy!
