This winter season, get inspired by the Malabar cuisine and prepare lip-smacking delights at your home using seasonal produce. This spinach and aloo stir-fry is perfect for this season as its flavour compliments paratha or dal-rice combo.
1 tsp mustard seeds 1 tbsp coconut oil Salt to taste 1-2 slit green chillies A pinch turmeric 2 tbsp water 1 cup washed spinach 1.5 tsp chopped garlic 1 potato cut into wedges
Heat a pan and add oil to it. Let mustard seeds splutter.
Add chopped garlic, green chillies, and turmeric powder.
Add potatoes and cook them with a closed lid.
Add splashes of water to escalate cooking and prevent spices from burning.
When aloo is almost done, add spinach and close the lid.
After a few minutes, the aloo-spinach stir-fry will be ready.
