Eid Ul-Adha 2024: How To Make Traditional Hyderabadi Mutton Biryani

Hyderabadi Mutton Biryani is one of the most popular Indian dishes and is mainly enjoyed during the Eid celebrations. Here's how you can make it at home with some simple ingredients.

Ingredients

For the Mutton Marinade: 1 kg mutton 1 cup yoghurt 2 tbsp ginger-garlic paste 3-4 green chilies 1 tsp each: red chilli powder, turmeric powder, garam masala, coriander powder, cumin powder 2 tbsp lemon juice Salt to taste

For the Rice: 3 cups basmati rice 5 cups water 2-3 cloves, 2-3 green cardamom pods, 1-inch cinnamon stick, 1 bay leaf Salt to taste For Layering: 2 large onions 1/2 cup each: chopped fresh coriander leaves, chopped fresh mint leaves 1/2 cup milk, a few saffron strands 2 tbsp ghee 1 tsp each: kewra water (optional), rose water (optional)

Step 1

Mix mutton with yoghurt, spices, lemon juice, and salt. Marinate for 3 hours or overnight.

Step 2

Soak rice for 30 minutes. Boil water with spices and salt. Cook rice until 70% done. Drain. Heat 2 tbsp ghee, cook marinated mutton until tender and oil separates.

Step 3

In a pot, layer cooked mutton and rice. Sprinkle fried onions, coriander, and mint. Repeat layers. Pour saffron milk, kewra water, and rose water. Dot with ghee.

Step 4

Seal the pot with a lid or dough.  Cook on low heat for 25-30 minutes and rest for 10 minutes. Serve hot with raita or salad.
