Seviyan, or Vermicelli Kheer, is a popular dessert made from roasted vermicelli, milk, and sugar, made during Eid and other festivities.
1 cup vermicelli (seviyan) 4 cups milk 1/2 cup sugar 2 tbsp ghee 1/4 cup chopped nuts (almonds, cashews, pistachios) 2 tbsp raisins 1/2 tsp cardamom powder
Heat 1 tbsp ghee in a heavy-bottomed pan. Add the vermicelli and roast it until it turns golden brown (stir continuously) and set aside.
In the same pan, add the remaining ghee, add chopped nuts and roast them. Add the raisins and sauté.
In a separate pot, bring the milk to a boil. Then, reduce the heat and let it simmer for 5-7 minutes. Add the roasted vermicelli. Cook on medium-low heat until the vermicelli is cooked and the milk thickens slightly in about 8-10 minutes.
Add sugar to the cooked vermicelli and mix well until the sugar dissolves. Add cardamom powder.
Add the roasted nuts and raisins to the kheer. Let the seviyan simmer for another 2-3 minutes.
Serve the seviyan hot, warm, or chilled. Garnish with additional chopped nuts and saffron strands.
