Sheer Khurma is a special treat made while celebrating Meethi Eid. However, it is also a part of Eid Ul-Adha or Bakra Eid which will be celebrated on June 17, 2024. Here is an easy recipe that will add sweetness to the festive spread.
3 tbsp ghee 20 almonds 1 litre milk 1 cup roasted vermicelli 30 pistachios 4 dates 2 tbsp chironji 1 tsp crushed cardamom A pinch of saffron strands Sugar to taste 1 tbsp rose water
If the vermicelli is not roasted, you can roast it in a saucepan and keep it aside. In the same pan, heat ghee and saute dates and dry fruits for 4-5 minutes.
In a heavy kadhai, start heating milk. Keep stirring it to prevent the formation of malai and bring it to a boil.
Turn down the flame and allow the milk to thicken. Add vermicelli and sugar. If you like moderately sweet, add 3 tablespoons of sugar.
After cooking the concoction for 10-12 minutes, it will further reduce in amount. Add saffron strands and crushed cardamom.
Switch off the heat and garnish the sheer khurma immediately with roasted dried fruits and dates.
Depending on your choice, enjoy the sheer khurma hot or chilled during festive celebrations.
