Making sheer khurma for Eid is a traditional practice. This rich, creamy dessert combines roasted vermicelli, milk, dates, and dry fruits for a delightful treat. It’s prepared with love and shared with family and friends and symbolises the sweetness of the festive celebration.
1 litre full-fat milk 1/2 cup vermicelli (seviyan) 1/4 cup ghee 10-12 pitted dates 1/4 cup sugar 1/4 cup almonds, pistachios, and cashews 2 tbsp raisins 1/4 tsp cardamom powder A pinch of saffron 2 tbsp chironji seeds Rose water
In a pan, heat ghee and roast the chopped almonds, pistachios, cashews, chironji, and raisins until golden brown. Remove and set aside.
In the same pan, roast the vermicelli until it turns golden brown.
In a large pot, bring the milk to a boil. Simmer for 10-15 minutes, stirring occasionally, until slightly thickened.
Stir in the chopped dates, sugar, and cardamom powder. Cook for another 5-10 minutes until the sugar dissolves and the dates soften.
Add the roasted dry fruits and saffron. Stir well.
Add rose water and serve warm or chilled, garnished with extra nuts.
