Eid celebrations are incomplete without meethi sewai or sheer kurma. The milk-based dessert is an integral part of the festive spread in India. It is enjoyed by young as well as adults. The recipe for sweet sewai is quite simple and boasts lip-smacking flavours and nutrition.
2 tablespoons ghee 1 cup sewai (thin vermicelli) 2 tablespoons rose water 4 cups full-fat milk ¼ cup chopped dried fruits and nuts ½ cup sugar ¼ teaspoon cardamom powder Chopped dates A pinch of saffron strands
Start by heating ghee in a heavy-bottom pan and roasting vermicelli in it until they are golden brown.
Keep vermicelli aside and roast dried fruits and nuts in the same pan until they release their aroma.
Add milk to an empty pan and pour in sugar once its temperature starts rising.
After milk thickens and sugar dissolves in 10-15 minutes, fold in roasted sewai and cook for 5 minutes.
Add chopped nuts, dried fruits, and dates into the sweet milky concoction. Garnish it with saffron strands.
After refrigerating it, pour sheer kurma into glass bowls, and add dates on the top before serving.
