The Parsi love for eggs is no stranger to us. Right from akuri to salli par eedu, you’ll find a variety of scrambled, poached and boiled egg varieties on the menu.
One such popular breakfast dish is the eggs chou chou. The dish is a delicious preparation of boiled eggs, where the yolk and whites are separated and meshed together.
• 4 boiled eggs • 1 peeled and sliced potato • ½ cup chopped coriander leaves • 1 diced onion • Oil • Chopped green chillies • 1 tablespoon Worcestershire sauce • Turmeric
Boil eggs and separate the egg whites from the egg yolk. Slice potatoes into thin straws and fry them until golden brown.
Then, put oil in a pan and add onions. Caramelize them properly. Add in your sauce with all the ingredients and spices.
Place the egg white mixture carefully and top it with the yolk. Garnish with potato straws and enjoy.
