This rich and flavourful dish made with succulent eggs and flavourful spices is a perfect way to treat your taste buds for lunch. It can be paired with naan, rice, pulao as well as roti. Here is an easy recipe to make egg korma at home.
6 eggs, 1 inch coconut (scraped), 2 tbsp green chillies, 1 tbsp coriander powder, 3 cloves, 1 inch cinnamon, 2 green cardamoms, ½ tsp turmeric powder, 1/4 cup milk, salt to taste, 3 tbsp ghee, 8 cashewnuts (chopped and roasted), 2 onions (chopped), 2 tbsp fresh coriander leaves
Grind together ginger, green chillies, coconut and all the spices. Break eggs, separate whites from yolks into a bowl and beat the egg whites till stiff.

Add the egg yolks, milk and salt to the egg white mixture. Beat the mixture again after 10 min and place it into a vessel containing water and boil till the egg is set.

In a pan heat ghee, add chopped onions and fry till light brown. Add the ground masala and fry again. Add 1/2 cup of water and bring to a boil.

Then add the egg cubes and cook gently till the korma thickens. Garnish with chopped coriander leaves and serve hot with rice and chutney.
